Varietal Blend: 100% Syrah

SOIL:

Volcanic soils, strong gravel outcroppings with 20% Serpentine soil and shale deposits. Elevation: 1400 feet.

TECHNIQUE:

Manually harvested. Picked at optimum ripeness and hand sorted in small bins. The fruit was destemmed and crushed into stainless steel fermentation tanks. Inoculated with Paster Red yeast, the fermentations were completed in about 12 days. During this time the wine was pumped over twice daily to facilitate extraction of color and tannin. The wine was gently pressed using a membrane tank press, and then racked off the gross lees into barrels. These barrels were then racked quarterly to allow for natural clarification. Aged for 18 months in 60 gallon French oak barrels, and bottled June 17, 2015.

TASTING NOTES:

Fresh and fruity with notes of black currant, Kalamata olives and a hint of smokiness. This wine takes these fruit aromas and adds just a dash of white pepper to create a lengthy, supple wine to accompany a meal, especially one that comes off the grill.
